*Yusheng , yee sang or yuu sahng is a Chaozhou-style raw fish salad. It usually consists of strips of raw fish (most commonly salmon), mixed with shredded vegetables and a variety of sauces and condiments, among other ingredients. Today, this dish is served as an appetizer to raise 'good luck' for the new year and is usually eaten on Renri, the seventh day of the Chinese New Year. In a celebration known as "lo hei", families and friends gather around the table and, on cue, proceed to toss the shredded ingredients into the air with chopsticks while saying auspicious wishes out loud to mark the start of a prosperous new year and it's customary that the higher you toss, the greater your fortunes!
**There are a few things to avoid when using chopsticks. Chinese people usually don't beat their bowls while eating, since the behavior used to be practiced by beggars. Also don't insert chopsticks in a bowl upright because it is a custom exclusively used in sacrifice.
Households Behavior
Families getting ready for dinner often has a person to distribute chopsticks pair by pair to the rest of the people or maybe rest the remaining chopsticks on the table and let who hasn't taken take. By giving out the chopsticks, it's an act of respect, concern and more family values. Having dinner together also enhances family bonds, distribution of chopsticks is only a part of it.
After dinner, chopsticks are once again gathered together for cleaning. Some might get a person to clear it all away, some others however might bring it for washing individually. Even by helping to collect the chopsticks or washing them altogether, shows unselfishness and a helpful attitude. These everyday actions can let a family stay happy and harmonious.
